Mood Boosting Bites

Description

These bites are great for snacking on the go, with healthy fats from the walnuts and coconut and a slightly sweet flavour from the cacao and figs. Using fig as the sweetener instead of dates means they aren’t too sweet, removing the temptation to overeat so you can enjoy in moderation.


Ingredients

Scale
  • 10 figs
  • 2 cups of walnuts
  • 2 tablespoons of coconut oil
  • 3 tablespoons of cacao
  • 1 teaspoon of cinnamon
  • Pinch of salt
  • 1/4 cup of shredded coconut

Instructions

  1. Add the figs to a bowl of water and allow to soak overnight.
  2. The following day blitz the walnuts in a food processor until they form a fine crumb.
  3. Remove the figs from the water and place in the food processor with the coconut oil, cacao, cinnamon and salt. Keep the water that the figs were soaking in to the side as you may add it to the mixture later on.
  4. Blitz all of the ingredients until they are combined and you have a sticky mixture. If you find your mixture is too thick you can add some of the water that the figs were soaking in but only add one tablespoon at a time until your desired consistency is reached.
  5. Smooth the mixture on to a tray lined with baking paper and then sprinkle the top with the shredded coconut.
  6. Cover the tray and allow to set in the refrigerator for at least four hours.
  7. Cut into small squares and store in the freezer or refrigerator until you are ready to eat.
